Crock Pot Salsa Chicken Breasts

So what do you do when you want to throw something in the crock pot, but don’t have the ingredients to make what you planned on?  Make something up!  That is what I did yesterday. I will admit to being a little bit nervous all day as to how it would turn out, but found out that was uncalled for and maybe I should trust my cooking abilities a bit more!  It was awesome! Curious, even a little bit?

This is how it went….

I had 6 frozen chicken breasts that I needed or wanted to do something with.  I threw them, frozen into the crock pot. I chopped up a couple slices of onions and threw those in on top, followed by some red pepper flakes, black pepper and garlic powder.  No, I did not measure.  I am not one that likes to do that-I like to add according to taste. Over this, I poured a jar of Cookies brand Medium Salsa, a can of Ro-Tel diced tomatoes with green chiles and finished with a bag of Steamables frozen corn. I put the lid on and let it cook on low for 7 hours.

At the end of the cooking time, I broke all the chicken up with a couple forks. Some of us ate it in bowls, and some used tortillas.  Either way, it was DELICIOUS!  Doesn’t it look good?

It was! I hear it was good reheated today, too!
